Guess who has an Instant Pot!

She’s as excited as I am.

Ok guys, I can admit that I’m pretty late to hop on the Instant Pot train, but boy am I so elated that I finally made it! This quarantine life has left me craving everything from Chick-fil-A to Korean BBQ. To my dismay when I started craving my favorite soup from Olive Garden, I couldn’t find a food delivery service that delivered Olive Garden. My heart broke into a million pieces, I swear a tear dropped from eye.

But that only meant one thing, it was time to break out the Instant Pot. I quickly hopped on Insta Cart and ordered all the ingredients for my Zuppa Toscana!

Within an hour, my groceries arrived, and it was time to get to cooking!

I was nervous because I never use anything like this before but thank goodness the instant pot is self-explanatory. This is easiest the best purchase I’ve made for me and the family. No more standing on my feet forever to cook a filling meal, I suck at making rice (Judge if you want) but the Instant Pot makes it a breeze within 4-6 minutes! Trust me you need one of these.

Follow these steps for my tasty Olive Garden dupe of Zuppa Toscana:

INGREDIENTS:

  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 lb.  hot Italian sausage, casing removed
  • 6 cloves garlic, minced
  • 1 onion, diced
  • 1/2 teaspoon dried oregano
  • 10 baby Dutch yellow potatoes or 3 Russet potatoes
  • 5 cups chicken broth
  • 1 tsp garlic Powder
  • 1 tsp Italian seasoning
  • 1 tsp seasoning Salt and black pepper
  • 1 tsp red chili flakes (optional)
  • 1 bunch kale, stems removed, and leaves chopped or baby spinach
  • 1 cup half and half

DIRECTIONS:

  1. Set a 6-qt Instant Pot® to the high sauté setting. Add olive oil and butter. Stir frequently, until butter melts
  2. Add garlic, onion and oregano. Cook, stirring frequently, until onions have become translucent, about 2-3 minutes.
  3. Add sausage and chili flakes, stir until lightly browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat.
  4. Stir in potatoes and chicken broth; season with seasoning salt, garlic powder and pepper, to taste.
  5. Place Kale on top of mixture, DO NOT mix kale in just lay it on top.
  6. Select manual setting; adjust pressure to High and set time for 10 minutes. When finished cooking, quick-release pressure according to manufacturer’s directions.
  7. Stir in half and half until heated through, about 1 minute; season with salt and pepper, to taste.
